Olive oil rooted in the traditional olive groves of Paxos.
Restoring and maintaining the soil food web supports the trees as a whole, reduces costs and opens up new opportunities to improve the quality and value of the island’s olive oil.

Our second gathering on Paxos.
Three members of the team returned to Paxos for the “Olive Culture & Ecotourism” event. Growers, agronomists and representatives of local government took part. We discussed how soil biology and gradual interventions can support the island’s traditional olive groves.
The response gave momentum to the next step: organizing pilot projects with local growers. The initiative is supported by the Ionian Environment Foundation.

The olive grove as a living classroom.
We are planning a regenerative agriculture project in an olive grove on Paxos, starting with a baseline assessment, followed by gradual interventions and monitoring under real field conditions.
Test, observe and share what we learn.
What we want to monitor
- Initial soil and tree condition
- Ground cover and spontaneous vegetation
- Organic matter and soil structure
- Soil biology and microscopy
- Compost production and use
- Water infiltration and retention
- Biodiversity and crop condition
- Change over time
The specific measurements and methods will be agreed with partners and growers when the field project is organized.
